Caramel Stuffed Chocolate Covered Pretzels


  • Pretzels, small twists or square shaped
  • 12 oz. Rolo candies, unwrapped
  • 2 - 11.5 oz milk chocolate chips
  • 2 Tbsp coconut oil
  • sea salt
1.   preheat oven to 350 degrees F.
2.   line a baking sheet with a silicone baking mat or parchment paper
3.   place pretzels on baking sheet in a single layer
4.   lay a Rolo candy on each pretzel and place in oven for 3 - 5 minutes
5.   gently press a pretzel on top of each Rolo to create a sandwich
6.   refrigerate until chocolate and caramel have cooled
7.   add chocolate chips and coconut oil into a microwave safe bowl
8.   microwave for 30 seconds and stir, repeat until chocolate chips are melted
9.   using a fork, lower a pretzel Rolo sandwich into the melted chocolate and cover completely
10. allow excess chocolate to drip off and place back on baking sheet
11. repeat with all the pretzel sandwiches
12. sprinkle sea salt on top of each of all the pretzel sandwiches
13. refrigerate for 1 hour or until chocolate is hard
14. enjoy!

Granola - Delicious and Easy!

12 C quick oats
1 3/4 C brown sugar
1 tsp salt
2 C nuts (pecans or almonds)
1 1/2 C canola oil
2/3 C water
3 tsp vanilla
2 C dried fruit (craisins, blueberries, coconut)

Combine oats and sugar.  Add salt, nuts, and berries, mix well. In separate bowl mix oil, water, and vanilla and add to dry ingredients until all is well coated.  Spread in bottom of 3-4 cookie sheets. Bake at 250 for 1 hour.

Caramel Corn

16 cups popped popcorn (this is approximately 1/2 cup unpopped kernels)
1 cube butter
1 c. brown sugar
1/4 c. corn syrup
1/2 t. baking soda

In a sauce pan combine butter, brown sugar, and corn syrup. Cook over low to medium heat, stirring constantly. When mixture begins to cling together and pull away from pan (about 15 minutes), remove from heat. Stir in baking soda. Mixture should look kind of foamy. Put popcorn into a large brown paper grocery bag. Pour caramel over top and stir a bit. Fold top of bag and place in microwave. Cook for 1 minute on high. Remove and stir. Fold over top again and cook for 1 minute and 10 seconds on high. Remove and stir. Pour out onto wax paper and spread out to cool.

Apple Toffee Dip

1 brick cream cheese
½ cup brown sugar
¼ cup powdered sugar
1 teaspoon vanilla
2 Skor bars

Beat together ingredients. Just before serving , add chopped up Skor bars. Eat with apple slices.
